Antica Modena was born in balsamic vinegar territory, a fertile area of sunny plains in the province of Modena. Here, the traditional vines are Fortana, Montuni, Sangiovese, Albana, Trebbiano, Lambrusco and Ancellotta. They produce grapes with a perfect balance of sugar and acidity. Only the best musts are cooked. Then, wine vinegar and vinegar aged for at least ten years are added to create a perfect blend. This we leave to mature naturally in fine wood containers for at least 60 days and up to over three years so it can be qualified as “aged”. This is how we give life to our Balsamic Vinegar of Modena PGI.
An ancient product, which tells the history and the stories of a land, which is refined with care and guided by the “Protected Geographical Indication” (PGI) mark of the European Union and the Modena Balsamic Vinegar Protection Consortium, as a guarantee of geographic origin and quality. Antica Modena carefully follows the (CE) N 583/2009 specification which regulates every productive and commercial aspect of its excellence, from basic ingredients to bottling.
